What Are The Steps to Canning Tomatoes?

Canning tomatoes are a common tomato product, convenient to store and eat, and widely used in both home and catering industries. So what are the steps to canning tomatoes? Below, we will introduce the main production process of canning tomatoes.

Step 1: Washing

Before entering the canned tomato production line, tomatoes must be washed to ensure the cleanliness of the raw materials. Bubble and spray washing machines are typically used, which not only ensures the integrity of the tomatoes but also effectively removes dirt and other impurities from their surface.

Step 2: Peeling

Before peeling tomatoes, soak them briefly in hot water to separate the cells between the skin and the flesh. Then, use a soft brush to remove the tomato skin.

Step 3: Canning and Sealing

After peeling, the tomatoes are canned according to the product type (whole tomatoes, crushed tomatoes, tomato chunks, etc.). Then, appropriate amounts of liquid (such as tomato juice or brine) and seasonings (such as salt and sugar) are added. After canning, the cans are sealed using a sealing machine to minimize air inside, preventing bacterial growth and oxidation, thereby extending shelf life.

Step 4: Sterilization and Cooling

Sealed canning tomatoes need to undergo high-temperature sterilization to ensure food safety and long-term preservation. The commonly used sterilization method is high-temperature, high-pressure sterilization. The mixture is heated to a specific temperature (generally 100℃ to 120℃) in an autoclave and held for a predetermined time to inactivate all bacteria, mold, and yeast inside the can. After sterilization, cooling is immediately carried out to rapidly lower the temperature inside the can, preventing overheating that could cause the tomatoes to soften or darken in color.

Step 5: Packaging and Storage

The canning tomatoes will be labeled and boxed. They will then be stored in the finished product warehouse.

 

Throughout the production process, the production workshop must be kept clean and dry to ensure the canned goods maintain optimal quality within their shelf life.
