What Are The Steps to Make Tomato Sauce?
Tomato sauce is a condiment made primarily from tomatoes and widely used in the food processing industry. Consumers love tomato sauce for its sweet and sour flavor. So what are the steps to make tomato sauce? Here are the main steps in tomato sauce production:
Raw material selection and cleaning:
The quality of tomato sauce depends primarily on the quality of the tomatoes used. Select tomato varieties that are ripe, bright red, firm, and high in solids. Before processing, the tomatoes are washed to remove surface impurities.
Crushing and pulping:
After washing, the tomatoes are fed into a crusher, where they are crushed into a coarse pulp. They then pass through a pulper, where they pass through screens of varying apertures to separate the skin, seeds, and pulp, leaving only the fine pulp.
Concentration:
Low-temperature evaporation under vacuum maximizes the preservation of tomato nutrients and color. Concentrated tomato pulp typically achieves a soluble solids content of 28–30% or even higher.
Sterilization:
Sterilization is a crucial step in ensuring the safety and hygiene of tomato paste. Microorganisms are killed by instantaneous heating at temperatures between 85°C and 95°C. This sterilized tomato paste maintains a longer shelf life while preserving its original flavor.
Filling and packaging:
Depending on market demand, different packaging formats can be used, such as:
Bags (soft bags or large bags),
Bottles (glass or plastic),
Cans (metal cans).
After packaging, the product undergoes cooling, labeling, and boxing before being released to the market.
Although the basic production process of tomato sauce is similar, the process of different types of products will be different. Our company can also provide customized tomato sauce production lines according to different products and processing steps.
